I cannot enter more than one digit into date

This is because Exif Editor limits values in date/time to be valid. So for example for days, you can enter at most 31. So when you type 6, you cannot add another digit, because 60–69 is not a valid day. If you want to override the value, wait a second and write some other number. It will overwrite 6.
